Varai

Ingredients:

1 1/2 cups varai
4 tbsps pure ghee
1 tsp cumin seeds
2 green chillies, chopped
3 cups buttermilk
Rock salt to taste
2 tbsps fresh coriander leaves, chopped
1/4 cup roasted peeled peanuts, crushed

Method:
  • Clean, wash and soak varai in three cups of water for half an hour.
  • Drain and set aside.
  • Heat sufficient ghee in a pan.
  • Add cumin seeds and when they begin to change colour, add green chillies and saute for a minute.
  • Add varai and mix well.
  • Saute for a minute or two.
  • Add buttermilk, rock salt and boil, then cover and cook on medium heat.
  • Add crushed roasted peanuts and garnish with coriander leaves.
